Across the pond, Americans are celebrating their biggest holiday of the year. Get in the spirit with these three Thanksgiving cocktails.
Combine your ingredients in a cocktail shaker. Shake for 20 seconds, then add ice. Shake for 20 more seconds and strain into a serving glass. Garnish with thyme.
50ml Gin
Juice of half a lemon
1tbsp pumpkin butter*
White of one egg
Sprig of thyme, to garnish
*To make pumpkin butter, combine 425g of pumpkin puree, 64g of muscovado sugar, 30ml of maple syrup, 50ml apple juice, juice of a quarter of a lemon, a quarter teaspoon of cinnamon and a pinch each of ground cloves, ground nutmeg and ground ginger, to taste, and a pinch of sea salt in a pot over medium-high heat, and stir to combine. Once it bubbles, reduce the heat and simmer for 15 to 20 minutes. When thick, remove from the heat and allow to cool.
In a mixing glass, combine your gin, bitters, maple syrup and one of your orange peel strips. Add ice and stir until combined and slightly diluted. Strain into an old fashioned glass filled with ice and squeeze the second orange peel’s essential oils over the drink, then slide it into the glass and serve.
50ml Gin
4 dashes Angostura Bitters
10ml Maple Syrup
2 strips of orange peel
Combine gin, simple syrup and lime juice in a cocktail shaker packed with ice and shake well. Strain into a glass filled with ice and top up with club soda. Garnish with thyme and lime slices.

25ml Elderflower Liqueur
1tbsp Thyme and Lime simple syrup*
Juice of one lime
Club soda, to top up
Lime slices and thyme sprigs, to garnish
*To make your thyme and lime simple syrup, combine 250g of sugar and 250g of water, along with two thick strips of lime peel and 5 thyme sprigs, in a saucepan over medium heat. Heat until combined and slightly thickened.
