Apple juice, prosecco and gin: a summer cocktail that will make any occasion special
This sparkling gin cocktail has just the right balance of tart, dry gin to sweet, juicy apple, enhanced by a little sugar syrup. You can use cloudy, clear or sparkling apple juice - whatever you prefer or have to hand - and the prosecco is optional, but does make for a delightfully bubbly, ‘special occasion’ feel!

Sparkling Apple Gin Cocktail
35ml gin
100ml apple juice
10ml honey or simple syrup
Squeeze of lemon juice
Prosecco, to top up
Add the gin, apple juice, sugar syrup* and lemon to a cocktail shaker with ice. Shake vigorously and strain into a chilled glass. (Alternatively, add all your ingredients to a glass filled with ice and stir gently for a minute.) Top up with prosecco. You can leave out the prosecco and just use apple juice or sparkling apple mixer, if you prefer. Garnish with a slice of apple or lemon and a few sage or mint leaves.
*To make simple syrup, gently simmer equal parts water and sugar over a low heat for a few minutes, until the sugar dissolves and the liquid has reduced into a light syrup.
