About Gin Provincia
Our August 2024 Gin of the Month comes from the dedicated team at Gin Provincia – the distillery seated at the foot of the Andes that’s changing perceptions of Chilean spirits with each of its bold bottlings.
Founders Gustavo Carvallo, Nicolas Muñoz and Cristiàn Silva have been friends since the age of 5, growing up and going to school together in Chile’s bustling metropolitan capital of Santiago.
Not far away, however, was a peaceful haven in Colchagua Valley to which the trio would escape in school holidays – Gustav’s farm, Shangri-La Lodge. On these fondly-remembered family visits they would enjoy horse riding in the mountains, listening to the nearby river and connecting with nature, so much so they continue to visit even now with their own families and children.
This deep-rooted appreciation of the region and its nature, alive with flourishing wildlife and endemic botanicals, would go on to become the inspiration for Gin Provincia. In each of their expressions, the team at Gin Provincia emulate the unique memories they hold of Colchagua Valley, and convey its botanical wealth and transcendental beauty through the use of native, local ingredients.
How is Gin Provincia Andes Dry made?
Gin Provincia Andes Dry, inspired by the Andes Mountains and the perfectly pure waters of the neighbouring Universidad Glacier, expertly combines 14 botanicals endemic to the area, including leaves from the native Chilean boldo tree and a root found at 3000 metre altitude called clove herb.
The team at Gin Provincia creates this expression through two fastidious distillation processes. The first involves macerating botanicals, primarily juniper and the other seed ingredients, for 24 hours.
The second process of vapour distillation entails distilling the liquid in copper stills where more aromatics are added to the botanical basket. The temperature is carefully controlled electronically, ensuring a slow distillation process to extract the very best flavours.
Post-distillation, the liquids are blended and left to rest for one month in stainless steel tanks under a controlled temperature, after which the spirit is diluted with glacial water from the foot of the Andes Mountains.
What does Gin Provincia Andes Dry taste like?
Lemongrass and black pepper offer an initial light and juicy aroma, quickly followed by assertive juniper, floral lavender and a palate-tinglingly bitter note of sarsaparilla. The finish offers more floral citrus in the lemongrass, with the native boldo botanical bringing warming, lightly spiced notes.
