Our May 2025 Rum of the Month comes to us from the talented and hardworking team at Lincoln Distillery. With their first rum, the team has continued their tradition of honouring their home county, taking inspiration from the area’s rich history of maritime trade, illicit smuggling and innovation. A bold flavour profile that balances deep, warming spice and subtle sweetness, this rum offers an exceptionally smooth sipping experience that still packs a punch.

May 2025 Perfect Serve Recipe:

Ingredients

• 50ml Lincoln Spiced Rum
• 150ml Dalston’s Ginger Beer
• Dried grapefruit slice, to garnish

Method

Fill a glass with ice and pour in the rum and mixer. Add the garnish, stir gently to infuse and serve.

This carefully crafted recipe creates a wonderfully refreshing, fruity cocktail with notes of ripe peach and sharp citrus. Paired with warming spice botanicals from our super smooth Rum of the Month, Lincoln Spiced Rum, this cocktail is the perfect combination of complexity and brightness.

Ingredients

• 50ml Lincoln Spiced Rum
• 25ml Peach Fizz Cocktail Syrup
• 100ml Dalston’s Peach Soda
• Peach wedge, to garnish
  

Method

Add all the ingredients in a glass filled with ice and give a quick stir to combine. Garnish with a peach wedge and serve.
