This lychee and raspberry cocktail is the perfect balance of sharp, sweet... and gin!
It’s hard to decide what the best aspect of this lovely cocktail is; is it the pretty pink blush of the raspberry liqueur against the pearly white glow of the lychee juice? Or is it the delicious balance of sweet lychee, tart raspberry and smooth gin? Maybe it’s the fact that you can whip it up just as easily in winter, with tinned fruit, as you can in summer, with wonderful fresh fruit? Whatever the answer, it’s a cocktail we love here at Craft Gin Club - and we think you will too!
Lychee and Raspberry Gin Smash
50ml gin
About 8 raspberries and 4 fresh or tinned lychees
Half a lime, sliced into wedges
15ml raspberry liqueur (or simple syrup)
75ml strained lychee juice
Fill a cocktail shaker with lots of ice. Add all your ingredients and shake thoroughly. Strain the liquid into your glass over ice. Garnish with a few fresh raspberries or lychees threaded onto a cocktail pick. If the drink is a little too sweet for your taste, add a squeeze of fresh lime and stir gently.
