With summer fast approaching, we are looking for delicious, gin-filled ways to stay cool! The Cawston Press Rhubarb Sparkling drink, in June’s Gin of the Month box is refreshing enough already BUT, we are all for experimenting here at Craft Gin Club (especially with our favourite spirit) and we think you’ll agree, these gin and rhubarb ice lollies will make your summer!
75ml gin
250ml Cawston Press Rhubarb
50g caster sugar
Sliced strawberries
Set out a six-hole lolly mould. Place a handful of sliced strawberries in each mould. Combine the gin, Cawston Press Rhubarb and caster sugar in a mixing glass, then stir until the Cawston Press Rhubarb loses its fizz. Divide the mixture between the moulds, push in the lolly sticks and freeze overnight.
