There are few things more refreshing than a huge pitcher of iced tea on a hot, sunny day. Especially when that iced tea is flavoured with fresh peaches and lots of yummy gin!
This cocktail recipe is quick and easy to make, and full of sweet, fruity peach flavours that balance so well against the rich bitterness of the tea. The gin then elevates the tipple with its fresh juniper and citrus tones.
What a treat!
300ml gin (a citrus-forward gin like Ludlow Triple Citrus and Pomegranate Gin is perfect!)
1l water, just boiled
4 teabags
100ml peach syrup
1 peach sliced
Fresh mint leave, a small hand full
For the peach syrup: In a pan on medium heat, dissolve 200g of sugar in 200ml of water and then add the diced flesh of 4 peaches. Cook until soft then removed the pan from the heat. Mash the peaches into a pulp and leave to infuse for 15 minutes. Sieve the syrup and then leave to fully cool before use.
Steep the teabags in the boiled water for 10 minutes. Remove the tea bags and allow the liquid to cool, moving it to the fridge after 20 mins. In a serving jug, combine the cooled tea, the gin, the peach syrup, the slices of peach and the fresh mint leaves. Keep in the fridge until you are ready to serve then give it a stir and add ice. Enjoy!
