From antiquity to the present day, one ingredient can be counted upon to warm the cockles of your heart on the coldest night: ginger. Inspired by the fiery Lamb & Watt Ginger Ale in our October 2018 Gin of the Month box, we’ve rounded up our favourite gin & ginger cocktails, to show you why it’s the warmer you’ll be craving all winter long!
Gin & Ginger
50ml gin
Ginger ale, to top up
Lime, to garnish
Fill a glass with ice. Add 50ml of gin, then top up with ginger ale. Garnish with a slice of lime to serve.
Breakfast at Tiffany’s
60ml gin
30ml lemon juice
2 x bar spoons of your favourite jam
2 x dash bitters
Bundaberg Ginger Beer
Lemon wedge to garnish
Combine gin, lemon juice, jam and bitters into a shaker. Shake, then strain into a jam jar. Top with Bundaberg Ginger Beer and garnish with wedge of lemon.
Gin-ger Tea
40ml Kalevala Gin
2tbsp ginger syrup*
100ml strongly brewed black tea
Juice of half a lime
For the Ginger Syrup:
120g fresh ginger
150ml water
150ml sugar
1/2 tbsp salt
Zest of half a lime
Combine the strong black tea and ginger syrup in a glass and stir. Squeeze in the lime juice and add the gin. Stir for a final time and garnish with a cinnamon stick.
*For the Ginger Syrup: Add finely sliced ginger, sugar, water, salt and lime peel to a saucepan and bring the mixture to a simmer. Simmer for 30 minutes without the lid. Discard the ginger and lime peel. Pour the liquid into the jar, let it cool and keep in the refrigerator.
Sour Ginger Ninja
Bundaberg Ginger Beer
50ml gin
30ml lemon juice
15ml egg white
7.5ml sugar
2 dash bitters
2 x ginger pieces 2cm x 2cm
Ginger cubes for garnish
Muddle ginger then add spirit, lemon juice, egg white, sugar and bitters. Dry shake without ice, add ice then shake again. Top with Bundaberg Ginger Beer. Garnish with the ginger cubes.
London Buck
50ml dry gin
15ml lemon juice, freshly squeezed
Ginger ale, to top up
Lemon wedge, to garnish
Pour gin and lemon juice into a tall glass filled with ice. Top up with ginger ale. Stir and serve with a wedge of lemon as garnish.
Ginger & Thyme Martini
55ml Richard III Gin
15ml ginger liqueur
3 sprigs thyme
3 dashes orange bitters
2 dashes angostura bitters
Lemon peel and thyme, to serve
Fill a cocktail shaker with ice and add all of your ingredients. Stir until combined, then strain into a cocktail glass. Garnish and serve.

50ml gin
15ml lime juice
15ml ginger syrup*
Ginger ale, to top up
Small handful of mint leaves
Muddle the mint in the bottom of a glass with the ginger syrup. Add the lime juice, then gin, then fill the glass with ice. Fill to the top with ginger ale and garnish with mint to serve.
*To make ginger syrup, combine 200ml of water and 200g of sugar in a saucepan with a small knob of ginger, peeled and sliced. Simmer until thickened, then leave the ginger to infuse. When cool, pluck out the ginger. Store the syrup covered in the refrigerator.

10ml lime juice
Ginger beer, to top up
Thyme, cucumber and candied ginger, to garnish
Build your cocktail in a glass over ice. Garnish and serve.
