Inspired by Craft Gin Club’s Blueberry Crumble cocktail, our September 2022 Cocktail of the Month, we’ve put together this gin-credible blueberry crumble recipe that’s brimming with berry-licious delight and lots of gin. It’s the perfect way to end a Sunday roast or simply treat yourself to a good old-fashioned crumble!

This easy crumble recipe takes just moments to make and yet is packed full of flavour.

The filling is a sumptuous mix of fresh blueberries and London dry gin - the gin adds rich juniper notes that complement the sweet-tart berries wonderfully. The touch of lemon juice then lifts the whole experience while the marvellously mellow vanilla rounds everything out delightfully.

Atop that glorious concoction sits a delectably crunchy, biscuity, nutty crumble that adds that quintessential crumble texture.

Be warned, gin and dessert fans are going to be fighting over this one…

Blueberry & Gin Crumble

Blueberry Crumble recipe

For the filling:

450g fresh blueberries
40g all-purpose flour
100ml London dry gin
60g light brown sugar
1 tsp vanilla extract
1 tsp fresh lemon juice
A pinch of salt

For the crumble topping:
100g unsalted butter, at room temperature
100g plain flour
3 tbsp granola, with any fruit removed and with any large pieces crumbled down
70g walnuts, finely chopped
100g ground almonds
100g demerara sugar

Combine all of the filling ingredients in a bowl and mix thoroughly. Transfer to a nine-inch pie dish.

For the topping, cream together the sugar and butter in a bowl. Add the flour, nuts and granola. Stir together and keep stirring until uneven crumbs form (the more uneven the better). Leave in the fridge for at least 30 minutes.

Preheat the oven to 180c. Place the cold crumb mixture on top of the berry mixture, making an even layer. Bake in the oven for around 30 minutes or until the crumb is golden and the berry layer is bubbling.

Allow the crumble to sit for 10 minutes and then serve with cream, ice cream or custard. Enjoy!
