A Raspberry Gin Mojito (with LOTS of ice) is the refreshing summer cocktail we need right now
The raspberry season is in full swing here in the UK, and we are absolutely loving this ultimate summer treat - especially in the VERY overdue hot weather!
As well as the plump, vivid pink berries and those tempting scarlet juices that make basically anything look a hundred times more appetising, the flavour of a really ripe raspberry - tart, slightly sweet, intensely fruity - can’t be beaten!
Whether using them to garnish a G&T, whip up a boozy pavlova for al fresco dinners in the garden, or adding them to fabulous gin cocktails such as the one below, we can’t get enough of this humble berry!
The Raspberry Gin Mojito was inspired by the classic Mojito cocktail. That recipe traditionally combines rum, mint, lime and sugar to delicious effect. Here, we’ve swapped the rum with gin, which adds a lovely layer of herbaceous, citrus flavour from all the natural botanicals.
Raspberry is, of course, a wonderful companion to gin; in fact you could even use a flavoured raspberry gin to intensify the rich fruitiness and vibrant pink colour. If you don’t have any raspberry flavoured gin, though, just use some really fresh, ripe raspberries and the flavour will come bursting through anyway. Happy sipping!
Raspberry Gin Mojito
About 15 raspberries, plus extra to garnish
50ml gin
15ml simple syrup
30ml freshly squeezed lemon or lime juice
A small handful of fresh mint leaves, washed and stalks removed
Soda water, to top up
Add your raspberries and 5-6 mint leaves (or more, depending on how big they are) to your gin glass and squash them very gently with the back of a spoon, just enough to release the natural juices. Add lots of ice, your gin, 15ml of simple syrup and a good squeeze of lemon juice, and stir. Top up with soda; taste and adjust the quantities of simple syrup, gin or lemon juice according to your preference. Garnish with a few fresh raspberries and some small, fresh mint leaves.
