We are in love with this light yet fruity, herby and complex cocktail recipe! Mixing two of our favourite beverages, gin and prosecco, with two of our favourite flavours, rhubarb and mint, it is simply divine.
What’s more, it’s so easy to make at home. So give it a go today!
The key to the recipe is picking the right gin. For us, it has to be WhataHoot Hushwing Gin, Craft Gin Club’s May 2023 Gin of the Month. It’s full of mouthwatering citrus tones and has a unique core of sea samphire that is savoury and rich and works exceptionally well with the rhubarb and mint in this recipe.
Of course, that familiar sweet-tart hum of rhubarb never fails to enjoy the company of fragrant mint. Together, they offer a symphony of English summertime flavours, of which we simply cannot get enough.
Prosecco then comes in with its bright and elegant bubbles, which set the whole experience alive while its crisp, white-wine melody provides a delectable contrast to the syrupy elements of this serve that is quite simply spectacular.

Rhubarb Spritz
40ml WhataHoot Hushwing Gin
40ml Rhubarb Syrup
Prosecco, chilled
3 fresh mint leaves
Fresh lime slice, to garnish
Muddle the rhubarb syrup and the mint leaves in a cocktail shaker. Add the gin and top with ice. Shake vigorously and then strain into a glass. Top with prosecco. Garnish, serve and enjoy!
