This delicious Lemon Drizzle cocktail recipe is inspired by the flavours of our favourite cake!

Zesty, sweet and bursting with zingy citrus flavour, Lemon Drizzle cake is one of our absolute favourite baking recipes here at Craft Gin Club - so much so, that we even invented a gin and tonic-laced version of the classic recipe!
The only thing missing was the perfect cocktail to serve with a slice of cake - so we got busy creating one!
The result, the amazing Lemon Drizzle Sling, combines gin, lemon curd, freshly squeezed lemon juice and a little sweet pineapple juice to recreate that delicious balance of flavours in a glass!

This easy cocktail recipe takes all of one minute to make - promise! - and uses very basic ingredients. So, instead of ‘ready, steady, bake’, why not switch it up this weekend? Ready… steady… shake!
50ml gin
1 large, heaped tsp lemon curd
60ml pineapple juice
½ lime, juiced
Soda, to top up
Lime, to garnish
Add your gin to your cocktail shaker and stir in your lemon curd. Add juice, lime and ice. Shake and strain into a tall glass filled with ice. Garnish with lime.
Alternatively, you can also serve this cocktail short! Just shake and strain the first mixture (minus the soda) into a coupe or martini cocktail glass.
